Ingredients
Quinoa 1 cupMinced chicken 700g
Chicken broth 2 cups
½ onion (chopped)
2 cloves garlic (minced)
Tomatoes with green chile peppers 280g (diced)
Vegetable oil 2 teaspoons
Cooking Steps
1) Bring quinoa and chicken broth to a boil. Reduce heat to medium-low, cover and simmer for 15-20 minutes until quinoa soften and water is absorbed.2) Heat vegetable oil over medium-high heat, saute onion and garlic for 5-7 minutes until onion is translucent.
3) Add minced chicken and break into smaller pieces while cooking for 10 minutes until brown.
4) Add cooked quinoa and diced tomatoes to the minced chicken, stir and bring to simmer.
5) Simmer for 10 more minutes or until chicken flavours are fully absorbed by the quinoa. Serve.
