Ingredients
Peach gum (10g)
Red dates (15 - 20 pieces)
Longan (50 -60g)
White fungus (50g, soaked and shredded)
Half a piece of brown sugar (you may substitute with rock sugar)
Water (700 - 800ml, you may use less water if you like the dessert to be thicker)
Cooking Steps
You may brew directly from the pot or use double boil method of brewing. The following steps used is for cooking directly in the pot. Timing will be doubled if using the double boil method.
1) Soak peach gum till it expand. (10g will become 120-150g after expanded)
2) Add red dates, dried longan, white fungus and water into the pot & boil for at least an hour using medium-high heat. Time is needed for the white fungus to soften to release its collagen.
3) Add in brown sugar and peach gum and continue to cook for 20 to 30 minutes. Do not cook for too long after adding the peach gum. If peach gum is boiled for too long (more than an hour), it will dissolve completely.
4) After 20 - 30 minutes, turn off the heat and the dessert is ready to serve.
